Help with your New Year’s Resolution To Eat Healthy ~

As always, I have a couple of New Year’s resolutions. Today, I’ll share one, but the other is a secret. I’m afraid if I make it public, it won’t come true. Is that a rule with resolutions or just wishes? They are quite different; wishes are magical; resolutions are self-propelled.
In any case, I’m keeping one resolution to myself and the other…well, here it is: eat more fruits & veggies. The good ones. Iceberg lettuce, pumpkin lattes and deep-fried blooming onions don’t count.
“I don’t plan to go vegetarian or vegan, just eat a diet that incorporates wagon loads of vegetables. In addition, I’m going to try to limit eating meals out to one a week, cook at home more and share my veggie-full recipes with you, my friends and readers. Here’s the first:
A Veggie-full Tomato Sauce this is essentially a knock-off of a Marcella Hazen classic.
28 oz can whole tomatoes with the juice
1 yellow onion, peeled and halved
5 tablespoons of butter (i’m eating more veggies NOT cutting out butter)
generous pinch of salt and many grinds of black pepper
3 cups butternut squash, peeled and cubed
Throw it all in a big kettle or sauce pan and simmer for an hour or until the butternut squash is fork tender. (READ REST OF RECIPE HERE)
